'Classic Tomato Spaghetti' and 'Mega Chocolate Fudge Cake'

I had so much fun cooking my first meal today. I chose a simple spaghetti dish to start off with, accompanied by a salad and a chocolate fudge cake for dessert.

Classic Tomato Spaghetti:
~Ingredients - 2 cloves of garlic, 1 fresh red chile, a small bunch of fresh basil, salt and black pepper, 1 pound dried spaghetti, olive oil, 1 x 14oz can of diced tomatoes, parmesan cheese

I started off by making the sauce first. First I cut the chile and 2 cloves of garlic into very small pieces. Cut the chile in half and remove the seeds, and then continue to cut it into smaller pieces. After doing that I picked a handful of basil leaves, picking off the stalks and putting them to the side (the stalks will be used for later). Jamie Oliver instructed to only use a handful of basil leaves, but I actually would suggest grabbing 2 handfuls, there was hardly any basil in my dish! Then I chopped the basil stalks into tiny pieces, and put them in a bowl with the chile and cloves of garlic. In a medium saucepan I threw in 2 big dollops of olive oil, the cloves of garlic, the chile, and the basil stalks. After the oil has started boiling and the garlic starts to brown, throw in the diced tomatoes and the basil. Then I just left it on a low heat until the spaghetti had finished boiling.

The spaghetti with the sauce turned out really well, and was enjoyed by all! It was scrumptious.



To accompany the pasta, I made a simple salad. I threw in cherry tomatoes, cucumber, salami, and just chopped iceberg lettuce with an olive oil and vinegar dressing.

Mega Chocolate Fudge Cake:
~Ingredients: 1 cup of bittersweet chocolate chips, 3/4 cup of butter (and extra to grease pan with), 2/3 cup of brown sugar, 2/3 cup of skinned almonds, 2 tablespoons of unsweetened cocoa powder, a pinch of salt, 4 large eggs, 1 1/3 cups self-rising flour, 1/4 pound of soft fudge, 10x10 baking pan

Pre-heat oven to 325 degrees. I started off by mixing the butter, almonds, 1 tablespoon of cocoa powered, and the salt. It said to mix in a food processor, but I found an electric whisk to be fine. Then one at a time add the eggs, and then the flour gradually, to stop it from spraying everywhere. Keep mixing until it is smooth. Then butter the baking pan sufficiently, you are told to use a 10x10 pan but a 10x8 pan works just fine. After spreading the butter, coat it with the other tablespoon of cocoa powder. Then spread the cake mix evenly throughout the pan. It then says to put pieces of fudge on top of the cake mix, but I was unable to find that. I improvised by using Smucker's hot fudge sauce, which worked out deliciously. I also used Gharadelli's chocolate chips and baking powder, which made it rich but made it perfectly tasty. I also served it with either vanilla icecream, whipping cream, or both! It was one of the best cakes I have ever made!

When we walked into your kitchen the aroma coming from there was SO inviting with the fresh garlic, tomatoes, basil and a yummy dessert baking in the oven. The fragrance of the warm hot fudge brownie from the oven was comforting. Your dishes were all awesome! One of the many things that I learned from you was adding the salami to your scrumptious balsamic salad of greens, cucumbers, tomatoes and fresh romaine. I am definitely going to do that in the future with my salads, I loved the salami. Thank you for that tip! It's a lot of work to prepare everything - from the planning of what to make, grocery shopping, prep, cooking/baking and having it all served hot on the table for your guests...and did you all of that very well! Your pasta dish was SO fresh with the tomatoes, garlic, fresh basil, & olive oil, a very nice combination - the pasta was cooked "al a dente" ...to perfection!! Dessert to top it off was amazing. I don't remember what it was called - it was a delicious fudge blonde brownie with yummy nuts baked in a beautiful dish...served warm with fresh cream and vanilla bean ice cream. Loved it - a definite "recipe keeper"!! There were no left overs at the end of our evening. Thank you again for serving a wonderful dinner - your company is always great. I give your dinner a definite 10 out of 10..well prepared, very fresh! Your dessert baked fresh just out of the oven... it just doesn't get any better than that!   2. Great first dinner tonight, Hannah! You wouldn't let me help you at all & you clearly didn't need any help, the kitchen was your domain:). I learned a lesson, namely that you don't need much sauce to make a pasta dish taste good, especially when you have fresh & simple ingredients.
    The chocolate fudge cake was also delicious.

    Thank you for inviting us for your opening dinner event. I really enjoyed your preparation of a classic spaghetti dinner tonight. The sauce was very fresh, and the delicate coating of the sauce truly allowed the flavour of the ingredients to come through. I also appreciated that you made enough, allowing me to have that second healthy helping. I have been to many an Italian restaurant, and without a doubt "Hannah's Classic" would be one that I would order if they had it on the menu.

    The salad was also a great complement to the main course. It had just the right amount of balsamic dressing and the salami added a nice flavour, continuing the Italian theme, and something that I had never thought of doing.

    They say copying is truly a type of complement, and I look forward to complementing you again in the very near future.

    I can tell you are getting at ease in the kitchen. The spaghetti was delicious. I think you made a different recipe from this and I would like to have it very much. The spaghetti was cooked to perfection. I always seem to over cook it when I make it. And, the sauce with meatballs was very fresh.

    It won't be long before you're helping your Mum cook dinner for a large crowd.

    Keep up the good work. I wish I could come to your presentation at school. I'm sure everyone will love the cookies you plan to make.

    Cooking can be fun and I'm sure you are learning that as well as many specific procedures. Trust your instinct and try new combinations. That's how the magic begins!
